Baked Cod with Shiitake Mushrooms and Bok Choy

I’m currently working on finishing up a couple of stories and recipes to share but they’re taking me a little extra time to get just right. In the meantime I thought I’d give you another quick and easy meal. Let’s call this the baking paper meal. Like the sheet pan meal, this recipe comes together with very little prep work or clean up required. It is also quick, extremely customisable and requires no fancy equipment in order to execute, and the options are endless. However, unlike the sheet pan meal, the baking paper meal bakes all at one time, so the components need to have equal cooking times.

Here’s the method to the baking paper meal: Choose all the ingredients, preferably ones with equal cooking times. First is your protein. Fish and seafood are great options. Choose a couple vegetables. Choose your seasoning. Lastly, stack it all up on the baking paper, seal it up and bake. Each parcel is one serving, so if you’re feeding four people you’ll bake four separate parcels. To note the recipe below is for one person, so if you’re feeding more, just multiply the ingredients by the number of people.

Here’s what today’s recipe looks like. I chose fish; specifically cod steaks from Mooloolabah Queensland Australia. Cod is a meaty fish, is quite easy to cook, and available around the world. Other great options if you can’t find cod, are snapper or grouper. I wanted to do a dish with Asian flavours so that helped me choose my veg; bok choy, shiitake mushrooms, and shallots. If you can’t find bok choy, gai lan (Chinese broccoli) is another great option. To complete the recipe, the seasonings I chose are soy sauce, sesame oil, ginger and garlic.

Baked Cod, Bok Choy, and Shiitake Mushroom in Baking Paper

Servings 1

Ingredients

  • 1 200 gr Cod or similar fish fillet
  • 1 head Bok Choy (small/baby) washed well and cut in half lengthwise
  • 5 Shittake mushrooms sliced 1/2 cup
  • 1/2 Shallot thinly sliced approx 2 Tbsp
  • 1 clove Garlic thinly sliced
  • 1 Tbsp Soy Sauce
  • 1 1/2 tsp Sesame Oil
  • 1/2 tsp Ginger grated
  • 1 tsp Vegetable oil or other neutral oil
  • 1/4 cup White Wine or Stock

Instructions

  1. Preheat oven to 200 C/400 F

  2. In a small bowl mix soy sauce, sesame oil, and ginger. Set aside.

  3. In a small saute pan heat vegetable oil over medium heat. Saute shallots and shiitake mushrooms until just soft. Add the wine or stock and cook for a few minutes longer. Set aside.

  4. Place the bok choy in the center of a large piece of baking paper. Top with half of the soy/sesame/ginger mixture and half of the garlic slices.

  5. Place the cod on top of the bok choy.

  6. Mix the remaining soy/sesame/ginger mixture with the shiitake/shallot mixture and place on top of the cod. Top with the remaining half of the garlic slices.

  7. Fold the baking paper to seal. Place on top of a baking tray and bake for 20 min.

Recipe Notes

Serving suggestion: Serve over jasmine rice.

To note – when increasing the number of servings do not simply double, triple or quadruple to wine/stock in the sauté mushroom step.  For one serving 1/4 cup, 2- 3 servings 1/3 cup, 4 – 6 servings 1/2 cup.

    Hi Lauren, my husband and I loved this recipe! I looked up recipe with Cod and Shiitake mushrooms and this popped up. Don’t you love it when you find the perfect recipe because you have almost all the ingredients on hand! I didn’t have bok choy. I had green cabbage that I sliced thinly. I added salt and pepper to the shallots and shiitake mushrooms , also on the fish.

    This was a 10!
