Dad & the Cream Cheese, Lettuce and Tomato
I’ve been thinking about my dad a lot lately. Maybe because it was just father’s day or maybe because his would be 71st birthday is coming up soon, but I also think it’s because I’ve been talking to a lot of people about their experiences with their fathers or step-fathers and I’ve heard the full range of the best to the worst. It makes me really thankful that my dad fell on the scale of the best.

Fourth of July Series part 3 ~ Oven Fried Chicken Sliders
Welcome back for part 3 of our Fourth of July series. Last time I shared with you Bow Tie Pasta Salad with Basil Vinaigrette. Today’s recipe is Oven Fried Chicken Sliders. I love this recipe. Truth is, I think I like them even more because they are a mini version of the full sized sandwich. I have a bit of a history with “mini” foods but I think that might be a story for another time…

Leftover Revamp ~ Hawaiian Burger
I hadn’t initially intended on sharing this with you but it was just too delicious not to. As you know, part of my new commitment to our kitchen is to use up leftover bits and pieces in the refrigerator and pantry and not be wasteful. Well, it was lunchtime and instead of running out to pick up lunch supplies I pulled a couple burger patties out of the freezer, some fresh pineapple leftover from my pineapple salsa, the last few slices of triple smoke deli ham, some jalapenos, and a bit of red onion. The one thing I did grab, was the burger buns from our favorite bakery around the corner. They have the nicest bread and croissants. Total bonus that they’re cheaper than buying bread from the grocery store and it tastes so much better!
