Steak and Potato Salad with Mustard Dressing
So it seems that Sunday Gravy was my 50th post! Who knew?! And it only took me two plus years to get there. So hooray for an LSL milestone! Let’s hope the 100th isn’t another two years away. I’m glad my 50th was Sunday Gravy. I really like that recipe but don’t worry #51 isn’t a bad one either. (really great transition there Laur; really great) Anyway……
I’ve found a great new butcher at the markets so I’ve been eating a lot more red meat. Hanger steaks, skirt steak, beef short ribs, and the other night these amazing porterhouse steaks. I had leftovers that I definitely didn’t want to waste. I could have just made a sandwich and call it a day but I remembered this potato salad my mom used to make with leftover London Broil. I was going to call her and ask her the details buuuuut it was around 6pm my time and 4am her time. I thought, maybe, she really wouldn’t appreciate being woken up over potato salad so I decided to wing it. I asked her about it at a more appropriate hour and she said the one she makes is from the Silver Palate Cookbook. Overall the ingredients were similar except for the dressing. Seems I can’t remember everything from when I was 13….So, this salad is great way to use up leftovers. It gets good beefy flavor from your steak, creaminess from the potatoes, crunch from the capsicums/peppers and onions and a tangy punch from the mustard dressing. Its a great dish to bring to a BBQ, or a picnic, a quick weeknight dinner, lunch for work or even the kid’s school lunch. I’m sure mom packed this for my sister and I at one point or another.
